This bread is so tasty and so easy to make that it will leave you breathless wondering how you could have thought for so long that bread making was a skill best left to culinary savants than to home cooks.

In 2006, Mark Bittman shared a no-knead bread recipe that Jim Lahey from the Sullivan Street Bakery in New York City created. (Hey, by the way, you should read that last article and savor every word. Although this recipe is simple, there’s a plethora of useful information about all the nuances of why this simple recipe works so well.)

Mr. Lahey created a simple, hearty, delicious, visually appealing loaf of bread that makes your home smell like your favorite bakery. A long rise and cooking in a Dutch oven are reminiscent of sourdough but don’t be afraid of this recipe. It may be simple, but it will instantly elevate anything you serve with it to restaurant status. Promise.

The recipe I use on the daily is slightly different than Mr. Lahey’s, adding a little more yeast to allow for a quicker rise. My family loses their common sense around this bread. (Gimme, gimme!)
