Who’dathunk?
Who decided that it wasn’t grown up to eat macaroni and cheese? I call fowl on that! This low carb mac & cheese is every bit as good as its full-on carb cousin.

Low Carb Mac & Cheese
Ingredients
2 heads of cauliflower, broken into florets
3 tablespoons of olive oil, or avocado oil
1 cup half and half
3 tablespoons unsalted butter
16 ounces shredded cheddar cheese
8 ounces shredded Monterey jack cheese
4 ounces cream cheese, cut into cubes
Parsley for garnish
Method
In an extra-large mixing bowl, toss the cauliflower with the oil. If you want to sprinkle a little salt over the cauliflower, go for it, but remember that it will lend to the overall saltiness in this recipe after you add the cheese. Spread the cauliflower over a large baking sheet and roast it in an oven pre-heated to 375 degrees until it’s lightly browned on the outside and very tender on the inside, about 45 minutes. Leave the oven on 375 after you pull the cauliflower!
