Lentil burgers to soothe your comfort food craving!
Cook 1 pound dried lentils in 6 cups vegetable broth or water for 20 minutes, until tender, then drain. In a large bowl, combine 3 eggs, lightly beaten, (or 1/4 cup of soy milk for vegan)1 tablespoon minced onion, 1 tablespoon parsley, 1 teaspoon dried Italian seasoning, ¼ teaspoon pepper, 2 cups instant oatmeal, and cooked lentils. Shape into patties. Add 2 tablespoons of olive oil to a skillet on medium heat. Cook patties 4–6 minutes on each side until golden brown, adding additional oil as needed. Top each patty with mozzarella or provolone cheese and cook 1 or 2 minutes longer until cheese melts. Serve with marinara sauce. Or caramelized onions! Or coleslaw! Or avocado! Or pickles, lettuce, and red onion! And a side of thick-cut potato wedges sprinkled with parmesan cheese!
